Red's Kitchen...

Everyone is in love with reality tv and competition such as cupcake wars, project runway and top chef.  Well, Hell's Kitchen is one of my favorites and I was responsible of creating an event that would include entertainment for a group of sorority sister.  Yes, I was included.  My line sisters agreed to compete for Red's Kitchen a mini version of Hell's Kitchen. You can create this same event with the following:
  • Chef Sequoia Ross
  • Sorority Sisters
  • 3 Judges (Presentation, Teamwork, Taste)
  • Venue
  • Rules, Prizes, Fun
There were 3 teams, which a team consisted of 2 individuals.  Each team was randomly picked through drawing of names.  Once the team was picked so was the culinary challenge of creating tapas. The challenge was to use recipes that were given by our Chef Sequoia Ross and present to the judges a theme of the sorority while displaying the element of sisterhood.
"Can you image, 6 girls in a kitchen cooking?"... 

Cobb Salad
8 hardboil eggs
40 large shrimp
2lbs mixed greens (romaine, spinach, etc)
2lbs bacon
2 cups bleu cheese
4 avocados
Place eggs in pot and cover with cold water, allow water to reach a boil.  Boil eggs for 5 to 7 minutes.  Remove pot from heat. Leave eggs in water for an additional 5 to 7 minutes. Pour & drain water from eggs.  Cool eggs with water.  Peel eggs and refrigerate.

Place 4 shrimp on skewer. Brush with garlic oil. Place shrimp on baking sheet lined with foil.
Broil shrimp for 5 minutes on each side.  Set aside.

Peel & thinly slice avocado.
Slice hardboiled eggs
Arrange mixed greens on platter.  Layers eggs, bacon, avocado, bleu cheese and shrimp atop decorate your plate.
Fresh Pineapple Salsa
4c of diced tomato
1tbsp minced garlic
1c diced pineapple
2 jalapeno peppers, seeded & chopped
2/3 c of diced onion'
1/4 c of mined cilantro
2tbsp fresh lime juice

Combine all ingredients in a bowl, cover & chill 1 hour

Sweet Corn Relish
1 1/2 tbsp olive oil
1 cup of chopped sweet onion
1/2 cup roasted red peppers, diced
1/3 cup green peppers diced
4 cans white corn, drained
1tbsp green chiles

Heat oil in skillet over medium-high heat. Add onions and saute. Spoon onion into bowl.  Ass remaining ingredients. Stir to combine.
Cover and refrigerate at least 1 hour.


Creole Swai

10 Swai fillets
2tbsp paprika
1/2 tsp salt
1/2 garlic powder
1/4 tsp ground red pepper
1 1/2 tsp thyme
2 tsp olive oil

Combine all herbs over fillet to make a rub.
Rub paprika mixture over fillets.
Place fillet on a hot grill pan brushed with olive oil.  Use a spatula to turn fillets gently.
